Coconut-Cilantro-Lime Rice

Ingredients

  • 2 cups jasmine rice rinsed and drained
  • 1 cup coconut milk
  • 2 cups water
  • 1/2 teaspoon salt
  • 1 teaspoon lime zest
  • 2 tablespoons lime juice
  • 1/2 cup cilantro chopped

Instructions

  1. Pour the rice into a large pot, along with the coconut milk, water, and salt. Stir together then cover with a lid. Bring to the boil then reduce the heat to low and let simmer for 15 minutes, until the liquid has evaporated. Remove from the heat and let it sit covered for 5 minutes.
  2. Add the cilantro, lime zest, and lime juice into the pot.
  3. Mix well.
