COCONUT EASTER NEST CUPCAKES

Ingredients

For the Cupcakes:
  • 1 ½ cups all-purpose flour

  • ½ cup unsalted butter softened
  • ¾ cup granulated sugar
  • 2 large eggs

  • ½ cup coconut milk
For the Buttercream Frosting:

  • 2 cups powdered sugar

For Decoration:
  • 1 cup sweetened shredded coconut
  • 12 Mini chocolate Eggs like Cadbury Mini Eggs or jelly beans

Instructions

Step No.1: Preheat and Prep

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
Step No.2: Make the Cupcake Batter
  1. In a medium bowl, whisk together flour, baking powder, and salt. In a large bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, then mix in vanilla and coconut extract. Alternate adding flour mixture and coconut milk, mixing until smooth.
