Coconut Lime Donuts
These Coconut Lime Donuts are full of flavor! Baked coconut donuts topped with creamy lime glaze, shredded coconut and lime zest.

Ingredients
Donuts
- 1 Cup all-purpose flour
- 1½ teaspoons baking powder
- ¼ teaspoon salt sea salt
- ¼ Cup granulated sugar
- 1 egg large
- ¾ Cup coconut milk canned, unsweetened
- ½ teaspoon vanilla extract
Glaze
- 1 Cup powdered sugar
- 1 Tablespoon coconut milk canned, unsweetened
- 2 teaspoons lime juice
Toppings
- ¼ Cup coconut shredded, sweetened
- lime zest of 2
- lime juice spritz, fresh
Instructions
Donuts
- Preheat oven to 325°F
- Mix flour, baking powder and salt.
- Add sugar, egg, coconut milk and vanilla. Mix.
- Spray 6 standard donut molds with nonstick. Divide batter between 6 molds.
- Bake for 12-14 minutes.
- Transfer to rack and allow donuts to cool completely before glazing.
Cup of Yum
Glaze
- Mix powdered sugar, coconut milk and lime juice until smooth.
- Dip each donut into glaze then return to cooling rack.
Toppings
- Mix shredded coconut and lime zest with a small spritz of lime juice.
- Sprinkle mixture on top of donuts immediately after glazing.
