Coconut Macaroons Recipe

Ingredients

  • 1 teaspoon freshly grated lemon zest
  • 2 teaspoon freshly squeezed lemon juice
  • ¼ teaspoon kosher salt
  • ½ cup sweetened condensed milk
  • 2 cups sweetened shredded coconut

  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the lemon zest, juice, and salt, stirring together with a fork. Set aside.
  3. In a separate medium bowl, combine the sweetened condensed milk and shredded coconut.
  4. Stir in the lemon juice mixture until the ingredients are well mixed.
  5. Using a spoon or portion scoop, drop small spoonfuls onto the prepared baking sheet. Leave about 1 inch between each cookie.
  6. Bake for about 10-12 minutes, just until the coconut flakes begin to turn a golden brown. Remove from the oven and allow cookies to cool completely.

Notes

  • Storage: Store coconut macaroons in an airtight container at room temperature for up to 7 days or in the freezer for up to 3 months.
