Coconut mocha hot chocolate

The perfect, rich and velvety mocha hot chocolate made with coconut milk topped with clouds of whipped cream and marshmallows.

Ingredients

  • 400 g (14oz) coconut milk
  • 100 g (3.5oz) chocolate chopped
  • 2 tbsp cocoa powder
  • ¼ cup brown sugar
  • 1 tbsp instant espresso or use 1 shot of espresso
  • pinch of salt
To serve
  • Whipped Cream
  • marshmallows
  • shaved chocolate

Instructions

  1. In a saucepan set over medium heat, heat the milk, the sugar, the cocoa powder and the espresso until it just starts to simmer but not boil.
  2. Whisk until the mixture is smooth and the cocoa powder has been incorporated. 
  3. Add the chopped chocolate and stir until dissolved, taking care not to allow the mixture to boil once the chocolate has been added. 
  4. Stir in the salt then taste and adjust seasoning by adding more sugar or salt if necessary. 
  5. Pour the hot chocolate into large cups then top with softly whipped cream, marshmallows and chocolate shards.
