Coconut Rice

Ingredients

  • 1 ¼ cup jasmine rice
  • 1 (13.5 ounce each) can coconut milk
  • ½ cup water
  • 2 teaspoons granulated sugar optional but recommended
  • ¼ teaspoon salt

Instructions

  1. Place the rice in a mesh strainer and rinse under cold water until the water runs clear.
  2. In a medium-sized saucepan, combine rice, coconut milk, and water. Stir in the sugar and salt.
  3. Bring ingredients to a boil over medium-high heat. Then reduce heat to a low simmer and cover.
  4. Cook covered for 20 to 25 minutes or until the liquid is absorbed and the rice is fluffy and tender.
  5. Remove from the heat and let rest covered for 5 to 7 minutes. Fluff with a fork and serve.

Notes

  • Makes 4 cups of coconut rice.
  • Do not lift the lid after reducing to a simmer.
