Coctel de Camarones (Mexican Shrimp Cocktail)

Coctel de camarones is a Mexican shrimp cocktail dish with heaps of tomatoes, onions, and chiles all in a spicy, zesty tomato sauce.

Ingredients

  • 1 lb medium shrimp cooked
  • 2 roma tomatoes chopped
  • 1/2 white onion diced
  • 1 Jalapeño seeded and diced
  • 1/2 long hothouse cucumber diced
  • 2 ribs ribs celery diced
  • 1/3 cup cilantro chopped
  • 1 cup ketchup
  • 1 cup Clamato juice
  • 1 juice of orange
  • 1/4 cup fresh lime juice 3-4 limes
  • 2 cloves garlic chopped
  • 2 tbsp hot sauce
  • 2 tsp kosher salt
  • 1 tsp ground black pepper
Serving
  • 1 avocado cubed at serving
  • saltine crackers

Instructions

  1. Add the tomatoes, onion, jalapeño, cucumber, celery and cilantro to a large bowl.
  2. Leave half of the shrimp whole and chop remaining shrimp into smaller pieces. Add all the shrimp to the bowl of vegetables.
  3. Mix together the ketchup, Clamato, orange juice, lime juice, garlic, hot sauce, salt and pepper. Pour this mixture over the shrimp and vegetables, tossing to coat. Refrigerate 30 minutes covered.
  4. Before serving, dice avocado and stir through. Serve in individual bowls or plastic cups with saltine crackers and slices of lime.
