Coffee Cake Cookies

Coffee Cake Cookies makes the best dessert recipe. Two of my favorite desserts combined into one for the perfect cookie recipe.

Ingredients

For the Streusel:
  • 1/2 cup all purpose flour
  • 1/2 cup butter softened
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • pinch of salt
For the Cookies:
  • 1/2 cup butter softened
  • 1/2 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1 Tablespoon cornstarch
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
For the Glaze:
  • 1/2 cup powdered sugar
  • 1 Tablespoon milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.  Set aside.
For the Streusel:
  1. Mix together all the streusel ingredients in a medium size mixing bowl with a pastry cutter or a fork until combined.
  2. Refrigerate while you prepare the cookie dough.
For the Cookies:
  1. Mix together the butter with the brown sugar and sugar with a hand held mixer or stand up mixer until combined and smooth.
  2. Add in the cinnamon, egg and vanilla extract until combined.
  3. Then turn the mixer down to low and add in the flour, cornstarch, baking powder, baking soda and salt until just combined.  Be careful not to over mix the dough.
  4. Use a large cookie scoop (approximately 3 tablespoons) to scoop the dough into 12 even rounded balls and place them on the baking sheet at least 2 inches apart.
  5. Make an indention into the center of each cookie ball with your thumb or a small spoon.
  6. Place approximately 1 tablespoon of the streusel into each of the cookie dough indentions.
  7. Bake for 10-12 minutes until the edges are set and start to brown slightly.
  8. Allow the cookies to set for 10 minutes on the baking sheet and then move them to a wire rack to cool completely. Sprinkle any remaining streusel on top of the cookies before topping with the glaze.  
For the Glaze:
  1. Whisk all the glaze ingredients together in a small bowl.  Check the consistency of the glaze.  Add more milk if the glaze does not drizzle easily.
  2. Drizzle the glaze over each of the cookies and then the cookies are ready to serve and enjoy!

Notes

  • Make sure that all the ingredients are at room temperature before making the cookies to ensure that the ingredients combine together smoothly. 
  • Store any leftover cookies in an airtight container at room temperature for up to 5 days.
