For the Cake:
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup butter softened
- 1/2 cup granulated sugar
- 1 egg
- 3/4 cup milk
- 2 teaspoon vanilla extract
For the Streusel Topping:
- 1/4 cup all purpose flour
- 1/4 cup brown sugar
- 1 1/2 teaspoon ground cinnamon
- 2 Tablespoons unsalted butter melted
Instructions
- Preheat the oven to 350 F (175 C). Spray a 9×9 baking dish with non-stick cooking spray.
- Mix together the topping ingredients in a medium mixing bowl and set aside.
- For the cake, whisk together the flour, baking, ground cinnamon and salt. Set aside
- In a separate bowl beat together the butter and sugar until light and fluffy with an electric mixture.
- Mix in the egg, milk and vanilla extract until combined.
- Gently mix the dry ingredients into the wet ingredients until just combined. Be careful not to overtax the batter.
- Pour half of the batter in the prepared baking dish. Sprinkle half of the topping on top.
- Top with the remaining cake batter and the remaining streusel topping.
- Bake at 350 F for 35-40 or until the toothpick inserted in the center comes out clean.
- Let the cake cool for 5-10 minutes and then it’s ready to slice, serve and enjoy!

Notes
- Store any leftover cake in an airtight container for up to 1 week. I like to reheat the cake in the microwave for 10-15 seconds before enjoying the leftovers.
