  • 1/2 cup rolled oats gluten-free, if needed, old-fashioned
  • 1/2 cup coffee strong-brewed
  • 1/3 cup Greek yogurt plant-based, if desired, non-fat, vanilla
  • 1/2 teaspoon vanilla extract
  • sweetener to taste (I used stevia, of choice

Instructions

  1. Mix all ingredients in a medium bowl, sweetening to taste.
  2. Let the mixture sit in the refrigerator for at least 6 hours or overnight.
  3. Plate and serve the next morning with toppings of choice.
