Ingredients

  • 2 cups granulated white sugar (400 grams)
  • 1 ½ cups strongly brewed coffee (350ml) (or 1 ½ cups water plus 5 tablespoons instant coffee)

Instructions

  1. Stir the sugar and coffee together in a pot, bring to the boil.
  2. Reduce the heat to a simmer for 10 minutes.
  3. Remove from the heat and allow to cool.
  4. Strain out any particles of coffee through a fine mesh sieve over a bowl.
  5. Pour the coffee syrup into a jar or bottle and keep in the fridge for up to 4 weeks.
