Colcannon (Irish Mashed Potatoes)

Traditional Colcannon is a creamy and delicious recipe for Irish Mashed Potatoes filled with tender cabbage. It’s the perfect side dish to enjoy on St. Patrick’s Day or anytime.

Ingredients

  • 2 pounds Yukon gold potatoes peeled and cut into chunks
  • 6 tablespoons butter unsalted
  • 1 small onion chopped
  • 2 cups cabbage or kale, thinly sliced
  • 1/2 cup whole milk
  • 1/4 teaspoon nutmeg
  • salt to taste
  • pepper to taste
  • fresh scallions or chives, chopped for garnish

  1. Place the potato chunks in a large pot and cover them with cold water. Bring the water to a boil and cook the potatoes until they are fork-tender, about 15-20 minutes.
  2. While the potatoes are cooking, melt 2 tablespoons of butter in a skillet over medium heat. Add the chopped onion and sauté until it becomes translucent and slightly caramelized, about 5 minutes.
  3. Add the sliced cabbage or kale to the skillet and cook until it wilts and becomes tender, stirring occasionally. This should take approximately 5-7 minutes. Remove from heat and set aside.
  4. Drain the cooked potatoes and return them to the pot. Add the remaining 4 tablespoons of butter and milk to the pot.
  5. Using a potato masher or a fork, mash the potatoes until they are smooth and creamy. Add more milk if needed to reach your desired consistency.
  6. Stir in the cooked onion and cabbage or kale mixture into the mashed potatoes. Season with the ¼ teaspoon nutmeg, salt, and pepper to taste. Mix well to combine all the flavors.
  7. Transfer the Colcannon Irish mashed potatoes to a serving dish.
  8. Garnish with fresh chives or chopped green onions.
  9. Serve the Colcannon Irish mashed potatoes hot as a delicious side dish, enjoy!
