Ingredients

  • 2 pounds Russet potatoes , peeled and cut into 2-inch pieces
  • 1 cup whole milk
  • 8 tablespoons unsalted butter , cut into tablespoons
  • 1 pound green cabbage , cored and coarsely chopped (about 4 cups)
  • 4 green onions , white and green parts chopped
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

  1. In a large saucepan, cover the potatoes by 1 inch with cold water. Bring to a boil, reduce to a simmer, and cook uncovered until tender, about 15 minutes.
  2. Meanwhile, combine milk, butter, cabbage, green onion, salt, and pepper in a medium saucepan. Bring to a bare simmer, and cook, stirring occasionally, until cabbage is tender, 10 to 15 minutes.
  3. Drain potatoes and add to the cabbage mixture. Mash with a potato masher until well combined.
  4. Season with salt and pepper.
