Ingredients

  • 1 pound spaghetti whole wheat noodles
  • 2 cups bell peppers sliced, baby
Peanut Sauce
  • 1/2 cup vegetable broth
  • 1/2 cup peanut butter reduced fat
  • 1/4 cup soy sauce reduced sodium
  • 1 tablespoon sesame oil
  • 2 tablespoons honey
  • 2 tablespoons ginger chopped, fresh
  • 2 garlic minced, cloves
  • 1/2 teaspoon crushed red pepper
Garnish
  • 4 scallions sliced
  • 1/3 cup cilantro chopped
  • peanuts optional, dry roasted

Instructions

Prepare Pasta
    Cup of Yum
  1. Prepare pasta according to directions on the box. Drain and place pasta in a colander with ice cubes. Let cool and drain.
Peanut Sauce
  1. Whisk together vegetable broth, peanut butter, soy sauce, sesame oil, honey, ginger, garlic and red pepper.
  2. In a large bowl toss cold spaghetti with sliced bell peppers and peanut sauce to coat.
Final Ingredients and Garnish
  1. Fold in onions and cilantro. Garnish with peanuts if desired.

Notes

  • Fold in the scallions, cilantro and peanuts right before serving to avoid the ingredients getting too soft. 
  • Mix in protein like diced chicken or shrimp if you aren't serving vegetarians. 
  • Coconut aminos can be used in place of soy sauce.
