Cold Noodles with Peanut Sauce Recipe
Make cold noodles with peanut sauce, a flavorful dish that is ideal for picnics and shared meals.
Ingredients
- 1 pound spaghetti whole wheat noodles
- 2 cups bell peppers sliced, baby
Peanut Sauce
- 1/2 cup vegetable broth
- 1/2 cup peanut butter reduced fat
- 1/4 cup soy sauce reduced sodium
- 1 tablespoon sesame oil
- 2 tablespoons honey
- 2 tablespoons ginger chopped, fresh
- 2 garlic minced, cloves
- 1/2 teaspoon crushed red pepper
Garnish
- 4 scallions sliced
- 1/3 cup cilantro chopped
- peanuts optional, dry roasted
Instructions
Prepare Pasta
- Prepare pasta according to directions on the box. Drain and place pasta in a colander with ice cubes. Let cool and drain.
Peanut Sauce
- Whisk together vegetable broth, peanut butter, soy sauce, sesame oil, honey, ginger, garlic and red pepper.
- In a large bowl toss cold spaghetti with sliced bell peppers and peanut sauce to coat.
Final Ingredients and Garnish
- Fold in onions and cilantro. Garnish with peanuts if desired.
Notes
- Fold in the scallions, cilantro and peanuts right before serving to avoid the ingredients getting too soft.
- Mix in protein like diced chicken or shrimp if you aren't serving vegetarians.
- Coconut aminos can be used in place of soy sauce.
