Ingredients

  • 3 cups shredded cabbage
  • ½ cup shredded carrots
Cole Slaw Dressing
  • ½ cup mayo
  • 1 tablespoons honey
  • 2 teaspoons Dijon mustard
  • 3 teaspoons rice vinegar
  • salt and pepper to taste

Instructions

    Cup of Yum
  1. Toss together shredded cabbage and carrots.
  2. Whisk together cole slaw dressing ingredients.
  3. Pour dressing over cole slaw, toss to combine. Taste, add salt and pepper as needed.
  4. Serve immediately or cover and store in fridge until ready to serve. Enjoy!

Notes

  • Variation: When I am serving cole slaw with Mexican food (on tacos or such) I like to leave out the dijon and add a tablespoon of fresh-squeezed lime juice and handful of chopped cilantro. j
