This light and healthy Coleslaw with Kale, Apples and Pomegranate Seeds is one of my favorite slaw recipes. It’s refreshing and zesty enough to be served as a side of any meal, yet at the same time sufficiently filling and satisfying to make your perfect lunch.

Ingredients
For the slaw:
- 2 1/2 cups cabbage shredded
- 1 cup apples shredded (drained and juice reserved)
- 1/2 cup carrots shredded
- 1 cup kale finely chopped
- 1/2 cup pomegranate seeds
For the dressing:
- 2 tablespoons minced scallions
- 1 1/2 tablespoons minced pickled cucumbers
- 1 tablespoon apple juice ( from the shredded apples)
- 1 teaspoon pickled cucumber water (or extra apple juice)
- 1/8 teaspoon salt
- 1/4 teaspoon oregano
- 2 Tablespoons apple cider vinegar
- 1 tablespoon sour cream (use vegan or use more olive oil)
- 1/4 cup olive oil

- If you are vegan, use vegan sour cream or skip it altogether and use olive oil to emulsify the dressing.
- Feel free to use spinach in this coleslaw recipe if you’re not a kale person.
