Color Changing Shimmery Phoenix Cocktail (Elderflower and Gin Cocktail)
This Color Changing Shimmery Phoenix Cocktail blends gin infused with butterfly pea flowers, lemon elderflower syrup, and an optional rum and cinnamon accent. The butterfly pea infusion gives the gin a deep blue color that shimmers with edible luster dust and changes hues when combined with the citrus-forward syrups. The resulting drink is visually striking and delicately floral with balanced sweet and tart notes.
Ingredients
Lemon elderflower syrup (makes 1¼ cups - for at least 4 cocktails)
- ½ cup lemon juice freshly squeezed, strained
- ½ cup elderflower syrup cordial
- ¼ cup vodka see recipe note if you're using St-Germain liqueur
Color changing shimmery gin (makes 1¼ cups - for at least 4 cocktails)
- 5 butterfly pea flowers dried
- 1 ¼ cups gin
- ¼ tsp Luster dust edible or food-grade luster dust, white or pearl
Phoenix cocktail (for one cocktail)
- 67 mL gin chilled in the freezer, 1½ jiggers, butterfly pea infused, color changing
- 67 mL elderflower syrup chilled, 1½ jiggers
- 67 mL lemon syrup chilled, 1½ jiggers
- 2 tsp rum 151 optional, PLEASE USE WITH CARE
- Pinch cinnamon optional
- 1 ice or some crushed ice, cube
Instructions
Lemon elderflower syrup (makes 1¼ cups - for at least 4 cocktails)
- Pour all the ingredients into a jar. Shake or stir to combine. Chill the syrup until needed.
Butterfly pea infused color changing gin (makes 1¼ cups - for at least 4 cocktails)
- Place the butterfly pea flowers and gin in a jar. Close the lid and let the flowers infuse the alcohol for a few hours (3 hours to overnight), until the gin turns a deep blue. You can see a recipe video and photos of the gin in this how to make color changing alcohol post.
- Strain the gin to remove the flowers. Discard the flowers and pour the gin into a glass bottle. Add the white luster dust and shake it to make a shimmery spirit. Place the gin in the freezer to chill.
Phoenix cocktail
- Place the ice cube in a heat resistant ¾ cup glass (like a rock glass or small tumbler) - this step is optional, and serves to keep the drink nice and cold.
- Shake the color changing gin to mix in the luster dust that may have settled to the bottom. Pour 1½ jiggers of the gin per drink into the glass.
- OPTIONAL - Using the back of a spoon, carefully layer 1 - 2 tsp of the rum 151 over the gin (per drink). Using a long nose firelighter or long match stick, light up the rum 151 layer.
- Serve the drink with 1½ jiggers of lemon and elderflower syrup on the side. Pour the syrup into the drink to change the color of the drink from blue to purple. Sprinkle a pinch of ground cinnamon over the flame to create sparks (optional).
- Smother the fire by placing a saucer / small dish over the glass for a few seconds. Stir and serve the drink. Enjoy!
Notes
- Substitute elderflower cordial and vodka with ¾ cup elderflower liqueur for a different flavor profile.
- Handle 151-proof rum with care and use only as an optional add-in due to its high alcohol content.
- Prepare syrups and infusions in advance to allow chilling and proper steeping of butterfly pea flowers.
