- 2 garlic crushed, cloves
- 1/2 red chile finely chopped, fresh
- 1 tsp sesame oil toasted
- 1 lime zest and juice
- 1 cup sunflower oil
- 2 eggplant cut into 3/4" pieces
- 8 to 9 oz soba noodles
- 1 Mango cut into 3/8" pieces or 1/4" thick strips, large ripe
- 1 2/3 cup basil chopped, leaves
- 2 1/2 cups cilantro chopped, leaves
- 1/2 red onion very thinly sliced
