These Cookie Dough Cookies are inspired and taste like Crumbl cookies. They’re soft, chewy cookies topped with buttercream frosting and cookie dough bites.

Ingredients

Cookie Ingredients:
  • 1/2 cup butter softened, unsalted
  • 1 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 2 teaspoons vanilla extract pure
  • 2 cups unbleached flour
  • 2 teaspoons cornstarch
  • 2 teaspoons baking powder
  • 1 teaspoon salt
Frosting Ingredients:
  • 1/2 cup butter 1 stick, softened, unsalted
  • 3 teaspoons vanilla
  • 2 cups powdered sugar Confectioners sugar
  • 1/2 cup mini chocolate chips
  • 1/2 cup cookie dough bites

Instructions

  1. Preheat the oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a medium sized mixing bowl, cream the butter, brown sugar, and sugar together.
  3. Add the egg and vanilla and mix well.
  4. Stir in the flour, cornstarch, baking powder, and salt.
  5. Use a two tablespoon cookie scoop to create cookie dough balls.
  6. Place the cookie dough balls on the prepared baking sheet about 2” apart.
  7. Bake for 9 minutes.
  8. Remove from the oven and shape the edges with a large cup or cookie cutter.
  9. Let the cookies cool completely on the baking sheet.
  10. While the cookies cool, make the frosting.
  11. To make the frosting, beat the butter until smooth and creamy.
  12. Add the vanilla and powdered sugar. Mix well until smooth.
  13. Pipe the frosting onto each cookie using a zippered bag with the corner cut off.
  14. Use a knife to spread the frosting into the center of the cookie.
  15. Garnish the cookie with cookie dough bites and mini chocolate chips.

Notes

  • You can always frost the cookies with a knife.
  • Pipe the frosting for smoother results on the edges.
  • If any are leftover, these cookies should be refrigerated because the cookie dough bites also need to be refrigerated.
  • Cookies can stay at room temperature and then be garnished with cookie dough bites when ready to serve.
