Cookie Dough Pretzel Bites

Salty pretzels filled with egg-free cookie dough and dipped in chocolate make an irresistible snack.

Ingredients

  • 1 tick unsalted butter softened
  • ¾ cups light brown sugar tightly packed
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • ¾ cups all-purpose flour + 2 tablespoons, heat treated
  • 2 ½ tablespoons heavy whipping cream
  • ½ cup chocolate chips
  • 50 small pretzels approximate amount
For dipping
  • 1 ½ cups dark chocolate melting wafers
  • 2 tablespoons nonpareils for sprinkling (optional)

Instructions

  1. In a stand mixer (or using a hand-mixer), cream together your butter and brown sugar until light and fluffy.
  2. Stir in vanilla extract.
  3. Sprinkle in salt and stir well.
  4. With mixer on medium-low speed, gradually add in your all-purpose flour until all ingredients are completely combined. Be sure to stop your mixer periodically to scrape down the sides and bottom of the mixing bowl with a spatula.
  5. Gradually add heavy cream to mixture until completely combined (again, pausing to scrape sides and bottom of bowl).
  6. Stir in mini chocolate chips
  7. Scoop out a heaping tablespoon of dough and roll it in your hands to form a ball*. Slightly flatten with your palm, and place it on top of one pretzel. Sandwich with another pretzel, and set aside on a wax-paper-lined cookie sheet.
  8. Repeat until all of the cookie dough has been sandwiched.
  9. Melt your chocolate according to the instructions on the package.
  10. Once chocolate has melted, take your pretzel-sandwiches one at a time and dip them halfway into the chocolate. Return to wax paper and immediately sprinkle with nonpareils or sprinkles, if using.
  11. Repeat until all sandwiches have been dipped and sprinkled.
  12. Allow chocolate to set before eating.

Notes

  • *If dough is too sticky, allow it to set in the refrigerator for up to 5 minutes until it is firm enough to roll. Do not allow it to chill for too long, though, or it will become too hard and you may break your pretzels trying to sandwich them around the cookie dough
  • How to Heat Treat Flour
  • It’s not just eggs in cookie dough that can pose a health risk, raw flour can contain dangerous bacteria like E. Coli too.  It’s really easy to heat treat flour! Bake it on a cookie sheet in the oven at 350°F for 5 minutes. Let the flour cool completely, so it doesn’t melt the butter.
  • Flour can also be heat treated by placing in a microwave for 30 second intervals until the flour reaches 165°F. Stir after each 30 seconds.
