Copycat Cheesecake Factory Cajun Jambalaya Pasta

Ingredients

  • 2 tablespoon olive oil
  • 1 lb chicken breast, diced *boneless/skinless
  • 1/2 red pepper, diced
  • 1/2 green pepper, diced
  • 1 onion, diced
  • 4 garlic cloves, minced
  • 1/2 lb shrimp, de-veined
  • 1/2 lb andouille sausage, sliced
  • 2 tablespoon Cajun Seasoning
  • 1/2 teaspoon salt
  • 1 cup chicken broth
  • 1/2 cup heavy whipping cream
  • 1 lb spaghetti or fettuccine, cooked

Instructions

  1. In a large skillet, add the oil over medium high heat.
  2. Add in the chicken, red pepper, green, pepper, onion, and garlic.
  3. Allow to cook for about 3-4 minutes.
  4. Add in the shrimp, sausage, Cajun seasoning, and salt.
  5. Cook until chicken is no longer pink and peppers are softened, about 8 minutes.
  6. Pour in the chicken broth and heavy whipping cream.
  7. Lower heat to low/medium and allow to simmer about 5 minutes.
  8. Add in the cooked pasta and toss to coat in sauce.
  9. Sprinkle additional seasoning if desired. Enjoy!
