Copycat Earl's Santa Fe Salad

My version of the Earl's restaurant Sante Fe salad. Who knew that dates could be so delicious along with Tex Mex?

Ingredients

  • 1 cup black beans
  • 1 cup corn
  • 1/3 cup dates chopped
  • 6 cups romaine lettuce shredded
  • 5-6 tablespoons avocado dressing honey, lime and garlic
  • 2 chicken breast cooked, seasoned with Tex Mex seasoning
  • 1 avocado chopped and divided into two
  • 1/3 cup goat cheese
  • 1 cup tortilla chip optional I prefer without, strips or broken tortillas

Instructions

  1. Combine beans, corn, dates, lettuce and dressing in a large bowl. Divide onto two plates.
  2. Slice the chicken breast into strips and place on top of salad.
  3. Place avocado on top.
  4. Sprinkle goat cheese and tortilla strips on top.
  5. Serving with a little extra dressing drizzled over the chicken breast.
