Ingredients

Muffins
  • 3/4 cup buttermilk
  • 1/4 cup water
  • 1 teaspoon instant coffee *or instant espresso
  • 1/2 cup butter
  • 1/2 cup semi-sweet chocolate chunks *plus more for garnish
  • 2/3 cup cocoa powder *Dutch processed is best
  • 1/2 cup dark brown sugar
  • 1/2 cup granulated white sugar
  • 1/4 cup oil *canola or vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups flour *all-purpose
  • 1/2 cup chocolate pudding mix
  • 1 tablespoon baking powder
Chocolate Ganache
  • 1/3 cup heavy cream
  • 1 cup semi-sweet chocolate chunks

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a saucepan on medium heat, warm the buttermilk, water and instant coffee.
  3. Once warm, add the the cocoa powder, butter and chocolate chunks.
  4. Remove from heat and set aside to cool slightly.
  5. In a large bowl, combine your flour, baking powder and dry pudding mix.
  6. In a separate bowl, whisk together both sugars, oil, eggs and vanilla.
  7. Slowly whisk the melted chocolate mixture into the sugar mixture.
  8. Add the wet mix to the dry mix and fold gently to combine.
  9. Line your jumbo muffin tin. Place ½ cup of the batter into each muffin liner. Top with additional chocolate chunks.
  10. Bake for 12-18 minutes until a toothpick inserted comes out with moist crumbs. Remove from oven and set aside to cool.
  11. Prepare your ganache by warming up the heavy cream in the microwave or on the stove.
  12. Once the heavy cream is very hot add the 1 cup of chocolate chunks and let sit for 5 minutes.
  13. Whisk until the ganache comes together and is glossy. Remove the center from each muffin and fill with ganache.
  14. Set aside to cool and allow ganache to set. Serve and enjoy!
