Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup cornstarch
  • 1 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 large egg lightly beaten
  • 1/3 cup granulated sugar
  • 2 tablespoons unsalted butter softened
  • 2 tablespoons vegetable shortening softened
  • 3/4 teaspoon vanilla extract
  • 3/4 cup low-fat milk
  • 1/2 cup half-and-half
  • 1/2 cup low-fat buttermilk
  • nonstick cooking spray

  1. In a large bowl, whisk together the flour, cornstarch, salt, baking soda, and baking powder. In a separate bowl, mix the egg, sugar, butter, shortening, and vanilla until smooth.
  2. Gradually incorporate the milk, half-and-half, and buttermilk into the wet mixture. Fold the wet ingredients into the dry ingredients until just combined, leaving a few lumps.
  3. Preheat your waffle iron and coat it with cooking spray.
  4. Pour about 1/2 cup of the batter into the iron and cook until the waffles are golden and crispy, roughly 4-6 minutes.
  5. Enjoy!
