A delicious corn and black bean salsa packed with fresh and summery flavors of lime juice, cilantro, and ripe tomatoes!
Ingredients
- 2 Roma tomato diced
- 15 ounce corn drained and rinsed, canned
- 15 ounce black bean drained and rinsed, canned
- ½ red onion diced
- 1 avocado pitted, peeled, and diced
- ¼ cup cilantro plus more for serving, chopped
- 1 lime juiced
- ½ teaspoon salt
Instructions
- In a large bowl, combine the tomatoes, corn, black beans, red onion, avocado, cilantro, lime juice, and salt. Toss to mix well.
