Corn and Tomato Salad with Basil and Feta

This Corn and Tomato Salad combines sweet corn, juicy cherry tomatoes, crisp cucumber, fresh basil, and crumbled feta cheese, dressed in a lemony avocado oil vinaigrette. Chilled or served at room temperature, it is a refreshing, bright salad ideal as a side dish.

Ingredients

  • 2 cups corn (fresh or frozen)
  • 2 cups cherry tomato or diced tomatoes
  • ½ cucumber English (hothouse) variety
  • 1-2 TBSP basil fresh, chopped
  • 1//2 cup feta cheese crumbled
SPEEDY LEMON DRESSING
  • ¼ cup avocado oil
  • 1.5 TBSP lemon juice fresh
  • 1 tsp Italian seasoning blend (I use salt-free Mrs. Dash)
  • ¼ tsp salt
  • ⅛ tsp black pepper `

Instructions

  1. In bowl or measuring cup, whisk together dressing ingreidents and set aside.
  2. Steam corn if using frozen. If using fresh corn, cook via your favoite method and remove from cob.
  3. Halve cherry tomatoes (or dice larger tomatoes) and peel + dice cucumber. Chop or chiffonade fresh basil.
  4. Combine vegetales, basil, dressing, and feta in a large bowl. Cover and chill in the fridge for 10 minutes, or server at room temperature if preferred. I love it both ways!
  5. If making in advance, drizzle half the dressing over the salad and chill overnight. Add remaining dressing before servng and enjoy!

Notes

  • Use fresh or frozen corn; if frozen, steam before combining with other ingredients.
  • Halve cherry tomatoes and dice cucumber into similar-sized pieces for balanced texture.
  • Prepare dressing in advance and whisk well before mixing with salad ingredients.
  • The salad can be chilled briefly to develop flavors, or served at room temperature based on preference.
  • For advance preparation, mix in half the dressing and refrigerate overnight; add remaining dressing before serving.
