Ingredients

  • 3 tablespoons butter
  • ¾ cup carrots diced
  • ¾ cup celery diced
  • ¾ cup onion diced
  • 3 tablespoon flour
  • 1 cup potato russet, gold, or red, diced
  • 2 cups corn frozen or canned
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 4 cups broth veggie or chicken
  • 2 cups half and half
  • 2 cups cheddar cheese

Instructions

  1. In a large saucepan, melt butter. Add carrots, onion, and celery. Cook until softened, about 5 minutes.
  2. Add salt, pepper, and flour. Stir until combined.
  3. Add broth. Stir until combined. Add potatoes. Bring to a simmer and simmer for 15 minutes.
  4. Add the milk and corn and bring back up to a simmer.
  5. Add the cheese and stir until melted.
