Corn Salsa
Colorful, healthy Corn Salsa, made with fresh corn, peppers, and zesty lime, is the perfect game-day snack, dinner side dish, or light lunch.
Ingredients
- 3 cups corn kernels from about 4 ears of corn, fresh
- 1 red bell pepper finely diced, medium
- 1/2 red onion finely diced, medium
- 1 jalapeño seeds removed and finely diced
- 1/3 cup cilantro chopped, fresh
- 3 tablespoons lime juice or juice of 1 lime, fresh
- 1/2 teaspoon salt plus more to taste, sea salt
- 1/4 teaspoon black pepper plus more to taste, ground
Instructions
- In a large bowl, combine all of the ingredients. Stir until well mixed. Adjust the seasoning as needed.
- Serve immediately, or allow the salsa to chill in the refrigerator for 1-4 hours before serving to enhance the flavors. Serve as a dip or a topping.
