Ingredients

  • 3 cups fresh corn kernels, from 4 ears sweet corn
  • 1 cup chopped red onion
  • 1/2 cup chopped fresh cilantro
  • 1 jalapeño, minced
  • 2 medium limes, juiced
  • Kosher salt and black pepper, to taste

Instructions

  1. In a medium bowl, combine the corn, red onion, cilantro, jalapeño, and lime juice. Season with salt and pepper, to taste. For the best flavor, let the salsa sit for 20 minutes before serving so the flavors can develop.
  2. Serve with tortilla chips, tacos, burritos, quesadillas, tostadas, salads, and more!

Notes

  • The salsa will keep in an airtight container in the refrigerator for up to 3 days.
  • If you want to add avocado, go for it!
