Corned Beef Sandwich Recipe

Every bite of this delicious sandwich is full of flavor and texture. The corned beef is topped with Swiss cheese, sauerkraut, and a creamy Russian dressing. Serve it with a dill pickle and fries for the ultimate mid-day meal!

Ingredients

  • 6 ounces sliced cooked corned beef
  • 4 lices rye bread
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Thousand Island dressing or Russian dressing
  • 4 lices Swiss cheese
  • ½ cup prepared coleslaw
  • dill pickle slices optional

Instructions

  1. Lightly toast the bread. Spread 2 slices with dijon mustard.
  2. Layer with swiss cheese, corned beef, coleslaw and dill pickle slices.
  3. Spread thousand island dressing on the remaining 2 slices and top the sandwiches.
  4. Serve with a pickle and crispy french fries.
