Corned Beef Sandwich

Stacked with corned beef, coleslaw, and Swiss cheese on rye, this sandwich is loaded with flavor in every bite!

Ingredients

  • 4 lices rye bread
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Thousand Island dressing or Russian dressing
  • 4 lices Swiss cheese
  • ½ cup prepared colelsaw
  • dill pickle slices optional
  • 6 ounces sliced corned beef deli or cooked homemade

Instructions

  1. Heat the corned beef in the microwave or a nonstick skillet over medium-low heat until warm. This is optional.
  2. Lightly toast bread. Spread 2 slices with dijon mustard.
  3. Layer with swiss cheese, corned beef, coleslaw and dill pickle slices.
  4. Spread thousand island dressing on the remaining 2 slices.
  5. Top sandwiches and serve with a pickle.

Notes

  • Corned Beef: This can be made with leftover corned beef or sliced corned beef from the deli. Corned beef can be sliced or pulled.
  • Homemade Thousand Island spread: Combine ¼ cup of mayonnaise, 1 tablespoon each of ketchup and sweet pickle relish, 1 ½ teaspoons white vinegar, ¼ teaspoon sugar, and 1/8 teaspoon onion powder.
