Ingredients

  • 1 3/4 cups buttermilk
  • 2 large eggs
  • 5 tablespoons (2 1/2 oz) unsalted butter melted and cooled, or 1/3 cup (79 ml) mild vegetable oil
  • 1 1/2 cups unbleached all-purpose flour
  • 1 cup fine or medium grind yellow cornmeal
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • honey or maple syrup for serving
  • butter for serving

Instructions

  1. In a medium bowl, whisk together the buttermilk, eggs, and melted butter or oil.
  2. In a separate bowl, blend together the dry ingredients.
  3. Quickly and gently stir the wet ingredients into the dry ones. Let the batter sit at room temperature until light and fluffy and the cornmeal has softened, about 10 minutes.
  4. Heat your waffle iron.
  5. Spoon the batter onto a hot waffle iron and cook until the waffle iron stops steaming or according to manufacturer’s directions. Serve immediately.
