Costco Quinoa Salad Copycat - Fresh & Healthy Homemade
Recreate Costco's famous Quinoa Salad at home with this easy copycat recipe featuring protein-rich quinoa, veggies, and tangy lemon dressing.
Ingredients
Dressing
- 1/2 cup vegetable oil
- 1/4 cup lemon juice fresh
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper ground
- 1/2 teaspoon cumin ground
- 1 tablespoon apple cider vinegar
Salad
- 1/2 cup red bell pepper finely chopped
- 1 cup Roma tomato chopped
- 1 medium cucumber seeded and chopped
- 1 cup kale finely chopped
- 1/2 cup cilantro chopped
- 2 cups quinoa tricolor, cooked
- 1 cup brown rice I love Success Brown Rice Boil in the bag, cooked
- 1 cup red lentils cooked
Instructions
- Combine all the dressing ingredients and mix well.
- In a large bowl, combine the red bell pepper, tomatoes, cucumber, kale, and cilantro and toss to combine.
- Pour the dressing over vegetables. Then add the quinoa, brown rice, and red lentils and mix well.
