Ingredients

  • 3 large eggs
  • 5 tablespoons cottage cheese
  • 2 teaspoons whole milk
  • 1/4 teaspoon kosher salt
  • 2 pinches black pepper
  • 1 1/2 teaspoons olive oil
  • 1 tablespoon chopped green onions

Instructions

  1. In a bowl, whisk together eggs, 2 tablespoons of cottage cheese, milk, salt, and pepper until smooth.
  2. Heat olive oil in a non-stick frying pan over medium-low heat.
  3. Pour the egg mixture into the pan, cooking for about 5 minutes until the eggs are mostly set.
  4. Spoon the remaining 3 tablespoons of cottage cheese onto one half of the omelette. Fold the omelette over and cook for an additional minute.
  5. Slide the omelette onto a plate, garnish with chopped green onions, and serve immediately.
