Cottage Cheese Pancakes

Cottage Cheese Pancakes are light, fluffy and packed with protein! They are so easy to make in the blender with ingredients like rolled oats, banana, and tangy cottage cheese.

Ingredients

  • 1 cup old-fashioned rolled oats
  • 1 large banana
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 large egg
  • 1/2 cup cottage cheese
  • 1 tbsp coconut oil
  • OPTIONAL: fruits, maple syrup

  1. Place the oats in a high speed blender and blend until minced. Add the remaining ingredients, except for the oil, and blend until just combined.
  2. Heat a nonstick skillet over medium-low heat. Drizzle with a tiny bit of coconut oil.
  3. Add batter with a 1/4 measuring cup, dropping about 4 pancakes per batch.
  4. Since the batter is on the thick side, you can help them spread just a bit with your spatula.
  5. Cook for 2 minutes, then flip and cook for 2 minutes more. Repeat with the remaining oil and batter.
  6. Serve with fresh fruits and a drizzle of maple syrup.
