Cottage Cheese Pizza Bowl Recipe

This protein-packed cottage cheese pizza bowl is a healthier way to satisfy pizza cravings without the heavy crust!

Ingredients

  • 1 cup cottage cheese drained of excess water
  • ¼ to ½ to ½ teaspoon garlic powder optional, to taste
  • ¼ to ½ to ½ teaspoon Italian seasoning or oregano and a pinch more to garnish
  • pinch salt and pepper to taste
  • 4 tablespoons low-carb pizza sauce or marinara sauce
  • ½ cup shredded mozzarella
  • 8 pepperoni slices (optional) or your choice of topping, see notes for ideas

Instructions

In the microwave oven

  1. (For a single serving, half the recipe) Optional step: If you're not a fan of cottage cheese's texture, blend it first to make it smooth and creamy.
  2. Add 1 cup cottage cheese to a microwave-safe bowl. Season with 1/4 to 1/2 teaspoon garlic powder, 1/4 to 1/2 teaspoon Italian seasoning or oregano, and a pinch salt and pepper to taste. Lightly stir in 4 tablespoons low-carb pizza sauce and half of the 1/2 cup shredded mozzarella.
  3. Add the remaining mozzarella on top, along with 8 pepperoni slices (optional) or your choice of toppings.
  4. Microwave on high for 2 to 3 minutes, until the cheese is melted and bubbly. Let sit for a couple of minutes to thicken before serving. Sprinkle some extra Italian seasoning or oregano on top, then enjoy warm on its own or as a dipping sauce.
Baked in the oven
  1. Preheat the oven to 400 °F (200 °C). Optional step: If you're not a fan of cottage cheese's texture, blend it first to make it smooth and creamy.
  2. Add 1 cup cottage cheese to a wide ceramic or glass bowl or small casserole dish (I used a 8-inch pie dish). Season with 1/4 to 1/2 teaspoon garlic powder, 1/4 to 1/2 teaspoon Italian seasoning or oregano, and a pinch salt and pepper to taste. Lightly stir in 4 tablespoons low-carb pizza sauce and half of the 1/2 cup shredded mozzarella.
  3. Add the remaining mozzarella on top, and optional 8 pepperoni slices or your choice of toppings.
  4. Place the cottage cheese pizza bowl in the oven and bake at 400 °F (200 °C) for about 15 minutes, or until the cheese is completely melted and bubbly. If you wish a gratinated topping, broil for the last 2 minutes, keeping a close eye to prevent burning.
Air fryer instructions
  1. Same as oven instructions above, but skip preheating and reduce the baking time by about 5 minutes.

Notes

  • Some extra topping ideas
  • Pizza bowl with veggies: Add sautéed mushrooms, onions, bell peppers, or cherry tomatoes, black olives, fresh basil.
  • With meat: shredded chicken, cooked ground beef, Italian sausage, turkey pepperoni, bacon, chopped or cubed ham, turkey breast, or any deli meat.
