Cottage Cheese Queso Recipe

This Cottage Cheese Queso is made with 4 simple ingredients and comes together in less than 5 minutes! It's perfect for a high protein snack or creamy, cheesy appetizer!

Ingredients

  • 1 cup 2% cottage cheese (220g)
  • 1 Tbsp taco seasoning
  • 1/2 cup shredded sharp cheddar cheese (56g)
  • 1/2 cup Rotel diced tomatoes and green chilis (110g) drained
  • tortilla chips for serving

Instructions

  1. Blend the cottage cheese and taco seasoning in a microwave-safe bowl with an immersion blender until smooth. Alternatively, blend in a blender or food processor then transfer to a microwave-safe bowl.
  2. Stir in the shredded cheese and Rotel. Microwave 60 seconds, then take out and stir and microwave for another 30-60 seconds or until the cheese has completely melted.
  3. Serve with tortilla chips and enjoy!

Notes

  • Store leftovers in an airtight container in the refrigerator for 4-5 days.
  • To reheat, gently warm the queso in the microwave, stirring every 30 seconds. You can also reheat it in a saucepan over low heat. Add a splash of milk or water if the queso has thickened too much. 
  • To make, transfer the cottage cheese mixture to an oven-safe dish and bake or air fry at 350F for about 5-10 minutes, or until the cheese is melted. I recommend stirring ever 2-3 minutes to ensure even melting.
