Ingredients

Cottage cheese toasts (Note 1):
  • 6 lices sourdough bread
  • 1 ½ to 2 tablespoons cottage cheese per toast
  • 1 small red onion or shallot or green onion, very finely chopped
  • Fine sea salt and ground black pepper
  • 1-2 teaspoons Dill chopped for salmon, egg, and cucumber toast
Topping ideas (Note 2):
  • avocado, lemon juice, sesame seeds, microgreens
  • smoked salmon, ½ teaspoon horseradish, dill
  • cucumber, dill, paprika
  • egg, dill
  • tomatoes, ½ teaspoon pesto, balsamic vinegar Optional: basil leaves and a drizzle of olive oil.
  • banana, ½ teaspoon honey, cinnamon

Instructions

Toasts:

  1. Optional: Whip the cottage cheese in a food processor until smooth. Otherwise, leave the cottage cheese as it is. Add salt and pepper to taste.
  2. Toast the slices of bread in a toaster.
  3. Chop the onions very finely.
  4. Mix: For cucumber, salmon, or egg toasts, mix the cottage cheese with 1-3 teaspoons of dill (depending on how much cheese you need for topping the bread).
  5. Spread 1 ½ to 2 tablespoons of cream cheese on each slice of bread.
Toppings:
  1. Avocado toast: Place mashed avocado or avocado slices on top of the cottage cheese toast. Drizzle with lemon juice, and sprinkle it with red onions, roasted sesame seeds, and some microgreens (if using).
  2. Salmon toast: Mix the cottage cheese with dill and a bit of horseradish. Top the bread with one or two thin slices of smoked salmon, onions, and extra dill.
  3. Cucumber toast: Mix the cheese with dill and a bit of sweet paprika. Top the bread with cucumber slices, onions, more dill, and paprika powder.
  4. Egg toast: Fry or poach the eggs. Mix the cheese with dill. Top the bread with the egg and onions, and sprinkle it with paprika, coarse sea salt, black pepper, and more dill.
  5. Tomato toast: Add a few tiny dollops of pesto on the cottage cheese and swirl the two together. Add tomato slices and drizzle them with a few drops of balsamic vinegar. Garnish with red onions, coarse salt, black pepper, fresh basil, and a little bit of olive oil.
  6. Banana toast: Top the bread with thickly sliced bananas, drizzle it with a little honey, and add a sprinkle of cinnamon.
