Ingredients

  • 1 cup low-fat cottage cheese
  • 6 large eggs
  • 1/4 cup unsweetened applesauce
  • 1/2 teaspoon pure vanilla extract
  • 1/2 cup whole-wheat flour
  • 1/4 teaspoon salt
  • maple syrup optional

Instructions

  1. In a blender, combine the low-fat cottage cheese, eggs, unsweetened applesauce, and vanilla extract. Blend until smooth and well combined.
  2. Add the whole-wheat flour and salt to the blender. Blend again until the batter is smooth.
  3. Preheat your waffle iron and lightly grease it with cooking spray. Pour the batter into the waffle iron and cook it until golden brown and steam is no longer escaping, about 3-6 minutes.
  4. Serve the waffles hot with a drizzle of maple syrup, if desired.
