Couscous Salad
- 250 gms couscous cooked per package directions and cooled, 8.8 oz
- 2 tbsp mint roughly chopped, leaves
- ¼ red onion thinly sliced
- 16 black olives I used Kalamata, pitted
- 2 orange
Vinaigrette
- 2 tbsp orange juice
- 1 tbsp lemon juice
- 1 tbsp honey
- 3 tbsp extra virgin olive oil
- salt to taste
