Ingredients

Couscous Salad
  • 250 gms couscous cooked per package directions and cooled, 8.8 oz
  • 2 tbsp mint roughly chopped, leaves
  • ¼ red onion thinly sliced
  • 16 black olives I used Kalamata, pitted
  • 2 orange
Vinaigrette
  • 2 tbsp orange juice
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • 3 tbsp extra virgin olive oil
  • salt to taste
