Cowboy Breakfast Casserole

Ingredients

  • 8 lices Bacon cooked and chopped
  • ½ pound breakfast sausage cooked
  • 1 cup onion diced
  • ½ cup red bell pepper diced
  • ½ cup green bell pepper diced
  • 1 (14 ounce) can pinto beans dained and rinsed
  • 1 cup Monterey jack cheese shredded
  • 1 cup cheddar cheese shredded
  • 15 large eggs
  • ⅓ cup milk
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 ½ cups frozen diced potatoes

  1. Preheat the oven to 350 degrees Fahrenheit and spray a 9x13 baking dish with pan spray.
  2. Add 8 slices bacon, ½ pound breakfast sausage, 1 cup onion, ½ cup red bell pepper, ½ cup green bell pepper, 1 (14 ounce) can pinto beans, 1 cup cheddar cheese, and 1 cup Monterey jack cheese to a large bowl and stir to combine. Pour into the prepared baking dish.
  3. In the same bowl, whisk together 15 large eggs, ⅓ cup milk, 1 teaspoon salt, and½ teaspoon ground black pepper. Pour the mixture into the baking dish. Scatter the 1 ½ cups frozen diced potatoes evenly over the top.
  4. Bake for 35-45 minutes or until the edges are set and browning, but the center still has a little bit of a jiggle to it. Let the casserole sit for 5 minutes. Serve with salsa, sour cream, and jalapenos.
