Cowboy Caviar

This cowboy caviar is such a tasty and easy chip dip. It has guacamole feel, but I like it better. It is also great used as a salsa on tacos or other Mexican dishes.

Ingredients

  • 1 can black beans
  • 1 can sweet white corn
  • 3 roma tomatoes
  • 2 avocados extra large (or 3 medium)
  • 1/2 bunch cilantro finely chopped
  • 1 lime juiced, more to taste
  • salt to taste
  • pepper to taste

Instructions

    Cup of Yum
  1. Drain and rinse beans and corn in a colander.
  2. Dice Roma tomatoes and avocados.
  3. Rinse, stem, and chop cilantro.
  4. Toss everything together in a large bowl with lime juice. Add salt and pepper to taste. Serve with tortilla chips.
