Ingredients

Cowboy Steak:
  • 2 cowboy steak , ribeye with frenched bone 2" thick
Steak Dry Rub:
  • 1/4 cup kosher salt
  • 1/4 cup paprika
  • 3 tablespoons garlic powder
  • 3 tablespoons onion powder
  • 3 tablespoons oregano dried
  • 3 tablespoons thyme dried
  • 2 tablespoons black pepper coarse ground
  • 2 tablespoons brown sugar , packed
  • 1 tablespoon cumin
  • 1 tablespoon Coriander

Instructions

Cowboy Steak:
    Cup of Yum
  1. Remove from the refrigerator for 1 hour.
  2. Season with dry rub and let sit for 20 minutes.
Steak Dry Rub:
  1. Mix all the ingredients together in a small bowl.
  2. Add to an airtight container and store for up to two months.
To Cook:
  1. Heat grill onto medium-high heat on half the grill.
  2. Add the steaks to the heat directly.
  3. Cook for 5 minutes, flip and cook for another 5 minutes.
  4. Move to the indirect heat side and cook for 4 minutes.
  5. Flip and cook a final 4 minutes.
  6. Remove from the grill and let rest.
  7. Slice the eye of the steak away from the bone and slice into 1/2" thick slices.
