Cracker Barrel Meatloaf Recipe

This is the ultimate copycat of the Southern comfort, Cracker Barrel meatloaf.

Ingredients

  • 2 pounds ground beef 80/20
  • 3 large eggs lightly beaten
  • 1 cup Ritz crackers crushed
  • 1/2 cup whole milk
  • 1 cup sharp cheddar cheese shredded
  • 3/4 cup yellow onion finely diced
  • 1/2 cup green bell pepper finely diced
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3/4 cup ketchup
  • 1/3 cup brown sugar
  • 1 teaspoon yellow mustard

  1. Preheat oven to 350°F (177°C).
  2. In a large bowl, combine the ground beef, eggs, crushed Ritz crackers, milk, cheddar cheese, onion, green bell pepper, salt, and black pepper. Mix until just combined.
  3. Form the mixture into a loaf shape and place it into a loaf pan.
  4. Bake for 30 minutes.
  5. While the meatloaf is baking, mix together the ketchup, brown sugar, and yellow mustard in a small bowl to make the glaze.
  6. Remove the meatloaf from the oven and spread the glaze over it.
  7. Return the meatloaf to the oven and bake for an additional 30 to 40 minutes, or until the internal temperature reaches 160°F.
  8. Let the meatloaf rest for 10 15 minutes before slicing and serving.
