Cranberry Almond Quinoa

Ingredients

  • 2 cups quinoa I use my rice cooker, cooked
  • 1 cup craisins
  • 1 cup almonds slivered
  • ¼ cup mint chopped, fresh
Dressing
  • ¼ cup olive oil
  • 2 tablespoon mint finely chopped
  • 4 tablespoon orange juice fresh squeezed
  • 1 teaspoon maple syrup (optional)
  • black pepper to taste
  • salt to taste

Instructions

    Cup of Yum
  1. Toss all salads ingredients in a medium bowl. Salt and pepper.
  2. In a small bowl whisk dressing ingredients together. Add some orange zest if you want extra orange flavor. Be sure to add salt and pepper to dressing.
  3. Pour over salad and toss with a fork. The fork keeps the quinoa fluffy.
