Cranberry Aperol Spritz (Ice Cube Cocktails!)

Ingredients

Festive Cranberry Ice Cubes
  • Orange slices
  • cranberries
  • star anise
  • cinnamon stick
  • rosemary sprigs
  • 2 cups cranberry juice
Aperol Spritz
  • 1 part Aperol
  • 1 part prosecco

Instructions

  1. Assemble: Arrange orange slices and cranberries into the bottom of each ice cube well (this is the ice cube tray I used), then add in star anise, cinnamon sticks, and rosemary.Once you have them looking how you like, pour cranberry juice into each well, almost (but not quite) to the top.
  2. Freeze until solid, about 4 hours.
  3. Serve: Place 1 large cranberry ice cube (or about 3 smaller cubes) into a serving glass. Top with equal parts Aperol and prosecco.

Notes

  • If you don't have Aperol, you can substitute it with another bitter orange liqueur, like Campari. The flavor will be slightly different, but it'll still taste delicious!
  • The ice cubes can last in the freezer for up to 2 months in an airtight container.
