Ingredients

BASE:
  • 1/2 cup vegetable oil or any oil of your choice
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon orange extract
  • 1 large egg
  • 1 cup all-purpose flour
  • a pinch of fine kosher salt
  • 1 teaspoon baking powder
  • 1/4 cup chopped White Chocolate or white chocolate chips
  • 1/3 cup dried cranberries roughly chopped
FROSTING AND TOPPING:
  • 8 ounces cream cheese softened
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon orange extract
  • 1/3 cup dried cranberries roughly chopped
  • 1/3 cup chopped White Chocolate or chocolate chips, melted

Instructions

    Cup of Yum
  1. Preheat the oven to 325F and line a 9x9 inch pan with parchment paper.
  2. With a hand mixer, beat the oil, sugar, extracts, and egg until creamy. Add flour, salt, and baking powder and mix just until combined.
  3. Fold in the cranberries and chocolate chips. The mixture will be similar to cookie dough, so it is a bit tricky to spread in the pan.
  4. Transfer the batter to your prepared pan and spread it into an even layer.
  5. Bake for 12-15 minutes, or just until set. Don't over-bake, or they will dry out and get crispy. We want the bar base to be like a super chewy cookie.
  6. Meanwhile, in a large bowl, beat the cream cheese with maple syrup, and extracts until smooth.
  7. Refrigerate the frosting until ready to use.
  8. Once the base is done baking, remove it from the pan and allow it to cool.
  9. Spread with frosting, then slice into four large squares. Cut the squares diagonally into triangles.
  10. Sprinkle with dried cranberries and drizzle with melted chocolate.

Notes

  • you may use any other flour of your choice
  • replace the vegetable oil with coconut oil if you like.
  • You may use coconut or cane sugar in place of brown sugar.
  • Maple syrup can be swapped with honey.
