Ingredients
BASE:
- 1/2 cup vegetable oil or any oil of your choice
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon orange extract
- 1 large egg
- 1 cup all-purpose flour
- a pinch of fine kosher salt
- 1 teaspoon baking powder
- 1/4 cup chopped White Chocolate or white chocolate chips
- 1/3 cup dried cranberries roughly chopped
FROSTING AND TOPPING:
- 8 ounces cream cheese softened
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon orange extract
- 1/3 cup dried cranberries roughly chopped
- 1/3 cup chopped White Chocolate or chocolate chips, melted
Instructions
- Preheat the oven to 325F and line a 9x9 inch pan with parchment paper.
- With a hand mixer, beat the oil, sugar, extracts, and egg until creamy. Add flour, salt, and baking powder and mix just until combined.
- Fold in the cranberries and chocolate chips. The mixture will be similar to cookie dough, so it is a bit tricky to spread in the pan.
- Transfer the batter to your prepared pan and spread it into an even layer.
- Bake for 12-15 minutes, or just until set. Don't over-bake, or they will dry out and get crispy. We want the bar base to be like a super chewy cookie.
- Meanwhile, in a large bowl, beat the cream cheese with maple syrup, and extracts until smooth.
- Refrigerate the frosting until ready to use.
- Once the base is done baking, remove it from the pan and allow it to cool.
- Spread with frosting, then slice into four large squares. Cut the squares diagonally into triangles.
- Sprinkle with dried cranberries and drizzle with melted chocolate.
Cup of Yum
Notes
- you may use any other flour of your choice
- replace the vegetable oil with coconut oil if you like.
- You may use coconut or cane sugar in place of brown sugar.
- Maple syrup can be swapped with honey.
