Cranberry Brie Bites

Cranberry Brie Bites are puff pastry pinwheels filled with tart cranberry sauce and thinly sliced Brie cheese, seasoned with fresh rosemary and brushed with egg wash for a golden finish. The combination of flaky pastry, creamy Brie, and tangy cranberry creates a balance of textures and flavors, ideal as an appetizer or snack. Ingredients

  • 2 heets puff pastry 1 box) thawed but cold
  • ½ cup cranberry sauce canned or homemade
  • 8 ounces Brie cheese sliced thin
  • 2 teaspoons rosemary minced, fresh
  • 1 large egg

Instructions

  1. Preheat oven to 350° F and line a large baking sheet with parchment paper.
  2. Lightly flour the counter or cutting board and unfold both of the thawed puff pastry sheets.
  3. Add ¼ cup of cranberry sauce to each puff pastry and spread evenly.
  4. Then lay 4 ounces of the sliced brie on top of the cranberry sauce.
  5. Sprinkle each sheet with one teaspoon rosemary.
  6. Gently roll each sheet of puff pastry as tightly as possible then seal the seam by pinching it slightly to it doesn't unroll.
  7. If the dough breaks, let it sit at room temperature for 5 minutes and try again. It may be too cold.
  8. Using a sharp serrated knife, slice pieces that are about ¾” thick, approximately 10 per roll.
  9. Place the pinwheels on the lined cookie sheet at least 2” apart.
  10. In a small bowl, add the egg and a splash of water and beat it to create the egg wash.
  11. Brush the tops and sides of each pinwheel with the egg wash.
  12. Bake for 14-15 minutes or until the bites are golden brown.
  13. Sprinkle with sea salt or fresh chopped rosemary.

Notes

  • Store the bites refrigerated in an airtight container for up to 4 days.
  • Reheat gently in the oven at 300°F until warmed through to preserve pastry texture.
  • Use homemade cranberry sauce if preferred for a fresher flavor.
  • Rosemary can be swapped for thyme or omitted according to taste.
  • Brie rind may be left on or removed as desired.
  • Applying an egg wash yields a golden, shiny crust on the puff pastry.
