Ingredients
Salad:
- 3 cups chicken or turkey, cooked, cubed
- ½ cup celery chopped
- ½ cup pecans chopped
- ½ cup dried cranberries
- ¼ cup red onion diced
- 1 apple chopped, medium
Dressing:
- ½ cup mayonnaise
- ½ cup yogurt plain, Greek
- 2 Tablespoons apple cider vinegar or enough to thin to mixable consistency
- ¼ teaspoon salt pepper (or to taste)
- ½ t Dijon mustard
- ½ t garlic powder
Instructions
- Chop the chicken, fruit and vegetables as needed.
- Mix together the dressing ingredients.
- Combine the salad ingredients in a large bowl, top with dressing and mix until well combined.
- Serve immediately or refrigerate until needed.
