Cranberry Chicken Salad

With dried cranberries and chopped apple, plus a fresh dressing that is part Greek yogurt, cranberry Chicken Salad is tasty and versatile.  Top a salad, fill a sandwich, stuff an avocado or more.

Ingredients

Salad:
  • 3 cups chicken or turkey, cooked, cubed
  • ½ cup celery chopped
  • ½ cup pecans chopped
  • ½ cup dried cranberries
  • ¼ cup red onion diced
  • 1 apple chopped, medium
Dressing:
  • ½ cup mayonnaise
  • ½ cup yogurt plain, Greek
  • 2 Tablespoons apple cider vinegar or enough to thin to mixable consistency
  • ¼ teaspoon salt pepper (or to taste)
  • ½ t Dijon mustard
  • ½ t garlic powder

Instructions

  1. Chop the chicken, fruit and vegetables as needed.
  2. Mix together the dressing ingredients.
  3. Combine the salad ingredients in a large bowl, top with dressing and mix until well combined.
  4. Serve immediately or refrigerate until needed.
