Cranberry Chip Shortbread Cookies
Cranberry Chip Shortbread Cookies combine classic buttery shortbread with bursts of tart chopped cranberries and sweet mini semi-sweet chocolate chips. These cookies have a rich, tender crumb from creamed butter and sugar, chilled before slicing to maintain their shape during baking. Ingredients
- 1 cup butter softened, unsalted
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 cups flour
- 1/4 cup chocolate chips mini, semi-sweet
- 1/4 cup cranberries , chopped
Instructions
- Preheat oven to 325 and line a half sheet pan with parchment paper.
- Add butter and sugar to a stand mixer and cream on high speed for 1-2 minutes until light and fluffy.
- Add in the vanilla extract.
- Lower speed to the lowest setting and add in the flour slowly until just combined.
- Stir in the chocolate chips and cranberries.
- Roll the mixture into a 2-inch wide log and wrap with plastic wrap.
- Refrigerate for 30 minutes.
- Cut into 1/2 thick slices and bake for 20 minutes.
- Cool completely before removing from baking sheet.
